{"id":1758,"date":"2024-07-29T19:42:56","date_gmt":"2024-07-29T19:42:56","guid":{"rendered":"https:\/\/crossingbayouteche.com\/?p=1758"},"modified":"2024-09-05T18:19:53","modified_gmt":"2024-09-05T18:19:53","slug":"dons-crabmeat-au-gratin","status":"publish","type":"post","link":"https:\/\/crossingbayouteche.com\/index.php\/2024\/07\/29\/dons-crabmeat-au-gratin\/","title":{"rendered":"Don\u2019s Crabmeat Au Gratin"},"content":{"rendered":"\n<p><em>(From Don\u2019s Seafood Cookbook,\u00a01958)<\/em><\/p>\n\n\n\n<p>Don\u2019s Seafood Restaurant, located in Lafayette, Louisiana, has been serving authentic Cajun food to generations of local seafood lovers since 1934.\u00a0 As a newlywed living in New England in the 1960s, I cooked this dish for new friends who had never heard of Cajun food, though I had to go easy on the cayenne pepper.<\/p>\n\n\n\n<p><strong>Ingredients:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 cup chopped white onion<\/li>\n\n\n\n<li>1\/2 cup chopped celery<\/li>\n\n\n\n<li>1\/4 lb. unsalted butter<\/li>\n\n\n\n<li>1\/2 cup all-purpose flour<\/li>\n\n\n\n<li>1 can evaporated milk, (13 ounces)<\/li>\n\n\n\n<li>1 cup shredded cheddar\u00a0cheese, divided\u00a0<\/li>\n\n\n\n<li>2 egg yolks<\/li>\n\n\n\n<li>1\/2 teaspoons salt<\/li>\n\n\n\n<li>1\/4 teaspoon cayenne pepper<\/li>\n\n\n\n<li>1 lb, lump crabmeat picked clean<\/li>\n<\/ul>\n\n\n\n<p><strong>Directions:<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>In a medium saucepan over medium-high heat, saute onions and celery in melted butter until vegetables are translucent for 15 to 20 minutes.<\/li>\n\n\n\n<li>Mix flour\u00a0into sauteed vegetables,\u00a0gradually adding evaporated milk.
